This is a super quick and easy flatbread! Use it for a base, for an appetizer, or just by itself!
1 3/4 cup shredded mozzarella
2 ounces butter
1/2 tsp baking soda
1/2 tsp apple cider vinegar * to activate the baking soda
1 egg
3/4 cup almond flour
1 tablespoon of basil, parsley, and oregano (you can also use thyme, dill, chives, or herbs of provence)
You can also use fresh herbs
Preheat oven to 425F *(if you want your flatbread to get super flaky, add your bread into the oven at 400 and let it bake as the oven finishes preheating to 425)
Melt butter and mozzarella together in the microwave or saucepan for about a minute. After it is melted add the rest of ingredients and knead into a ball. If the dough is sticky add olive oil to your hands and continue kneading it. Spread out on parchment paper and bake for 10 minutes.
