Ingredients (Makes 6 bagels):
1 cup almond flour
3 tablespoons coconut flour
3 tablespoons butter softened
2 cups shredded mozzarella (or any hard cheese - cheddar works well)
1 large egg
1 tablespoon apple cider vinegar
1 tablespoon baking powder
For the topping: black sesame, white sesame, or everything bagel seasoning.
Instructions:
Preheat oven to 400 F. Grease bagel pan with olive oil or ghee butter (if you don't have a bagel pan or mold you can simply make a round dough ball and they will puff up). Melt cheese and butter together in the microwave for 60 seconds, until it can be stirred together evenly. Add flour, apple cider vinegar, baking powder, and egg. Combine until it forms a dough. Knead the dough for about 2 minutes until it is evenly combined. If it is too sticky, add more almond flour (a tablespoon at a time). Grease your hands with olive oil and evenly distribute it in the bagel mold, Once in the mold add seeds or everything seasoning. Bake for 15 minutes.
